A Tale of Two Cakes

I think I’m losing it. Twice this summer I’ve made cakes for special occasions and forgotten to put sugar in the batter.

The first time was for Tygh’s birthday on July 31st. We’d had the grandkids spend the night on the 30th so we’d had a busy evening. I woke early to make his birthday cake. Jill and Chris were coming in the morning to pick the kids up and Autumn wanted to help frost the cake.

I sensed something wasn’t right when I noticed as the cake was baking that it wasn’t rising as much as it should. Suddenly, I thought to myself “I don’t remember putting sugar in that cake”. Ugh. That feeling of dread. We were having people over later in the day for a birthday party and I had a four year old who really wanted to help put the finishing touches on.

I thought of just serving it as it was but it was a birthday, for Pete’s sake, and so at the last moment I decided to start over. The second cake with sugar with really good, Autumn got to help me decorate and all turned out well. Except for having to rewash all the baking pans and utensils.

I made a mental note to be more careful next time and to not let that happen again.

Flash forward to a month or so later. We were to have dinner with Jer and Sharon and I’d offered to bring dessert. Something light, summery and citrus sounded good. I found a recipe for Lemon Bundt cake that looked beautiful and had good reviews.

Would you believe I did the same thing? I had the cake in the oven when I realized I didn’t remember to put sugar in the batter.

Since we weren’t bringing the whole cake to dinner, I asked Tygh to try a slice with his coffee when he woke up. I knew that his reaction to it would determine whether I’d be making a whole new cake.

Sure enough he said, the glaze is really good but it doesn’t taste very sweet.

So, I had to bake another cake that day.

Lesson learned. Twice. From now on, I will double and triple check ingredients before I put my cakes in the oven!
